<p>4 cucchiai di olio extra vergine di oliva</p>
<p>2 cucchiai di succo di limone</p>
<p>1 spicchio di aglio</p>
<p>peperoncino</p>
<p>sale marino integrale</p>
<p>Una manciata di prezzemolo fresco tritatao</p>
<p>Una manciata di menta fresca tritata.</p>
<p>&nbsp;</p>
<p>Lavate le melanzane e punzecchiatele con una forchetta, mettetele in forno a 190C per circa 30 minuti.</p>
<p>Prelevate la polpa con un cucchiaio e raccoglietela in una ciotola.</p>
<p>Unite l&#8217; aglio tritato, l&#8217;olio, il succo di limone, il peperoncino e il sale.</p>
<p>Riducete il tutto in purea.</p>
<p>Unite il prezzemolo e la menta e fate riposare la crema in frigo per una mezz &#8216;ora.</p>
<p>Spalmatela sul vostro pane tostato (meglio se di grano duro e biologico) e decorate con foglioline di menta fresca.</p>

<p>1 spicchio di aglio</p>
<p>1 cucchiaino di cumino</p>
<p>2 cucchiai di farina</p>

<p>Mezza cipolla rossa</p>
<p>sale q.b</p>
<p>una presa di peperoncino</p>
<p>una manciata di prezzemolo</p>
<p>una manciata di menta</p>
<p>&nbsp;</p>
<p>Per la preparazione dei Falafel e&#8217; indispensabile mettere i ceci in ammollo in acqua per 24 ore.</p>
<p>Una volta scolati bene i ceci ( devono essere crudi)  frullateli con la cipolla, l&#8217;aglio e il prezzemolo in un frullatore fino ad ottenere un impasto morbido.</p>
<p>Aggiungete quindi il cumino, il sale, la farina, l&#8217;olio,  la menta e il peperoncino .</p>
<p>Frullate nuovamente aiutandovi poi con le mani.</p>
<p>Quando non si riesce a formare le polpette perché il composto risulta troppo liquido e non compatto, si può aggiungere un po&#8217; di farina.</p>
<p>Lasciate riposare l&#8217;impasto ottenuto  in frigorifero per almeno 3 ore.</p>
<p>A questo punto, possiamo preparare i nostri falafel.</p>
<p>Preparate una padella per la frittura con olio di cocco e con l&#8217; impasto formate delle polpettine non troppo grandi.</p>
<p>Friggete i falafel fino a farli diventare leggermente dorati.</p>
<p>serviteli ancora caldi  ..</p>

<p>50 g grated parmesan cheese</p>
<p>4 Tbsp extra virgin olive oil</p>
<p>1 small pinch of salt</p>
<p>Breadcrumbs</p>
<p>1 big bunch of fresh mint, parsley and basil.</p>

<p>Firstly finely chop the herbs.</p>
<p>(1) Place the ricotta cheese, the chopped herbs, the parmesan cheese, the eggs yolk, and a  small pinch of salt in a bowl.</p>
<p>In the meantime beat the egg whites with a small pinch of salt and add it to the ricotta mixture ( 1 ) .</p>
<p>Now you are ready to obtain some small and flat patties.</p>
<p>Pass them in the bread crumbs and put in the oven for about 20 minutes until gold and crunchy.</p>

<p>1/2 cup of wholemeal flour</p>
<p>3 tbsp extra virgin olive oil</p>
<p>1 tbsp salt</p>
<p>Few drops of lemon juice</p>
<p>A bunch of fresh Rosemary</p>

<p>Place all the ingredients in a  bowl and add 1/2 cup of  warm water, working it with your hands until you have obtained  an elastic dough ( add more  water/ flour if you need it).</p>
<p>Leave it to rest  for about 40 minutes and cover it with a clean kitchen towels.</p>
<p>Now you are ready to obtained from the dough some small and flat breads about 1 cm high.</p>
<p>Heat a pan, previously greased with a little bit of coconuts oil and cook each small bread for about 5 minutes each side</p>

<p>1 tazza e 1/2 di farina bianca</p>
<p>1/2 tazza di farina integrale</p>
<p>3 cucchiai di olio extra vergine di oliva</p>
<p>1 cucchiaio di sale marino integrale</p>
<p>succo di limone ( qualche goccia)</p>
<p>Rosmarino (se fresco tagliato molto finemente)</p>
<p>&nbsp;</p>
<p>Mescolate tutti gli ingredienti in una ciotola unite 1/2 tazza di acqua tiepida e lavorate fino ad ottenere un impasto elastico ( aggiungete farina e/o piu&#8217; acqua se necessario). Lasciatelo riposate 40 minuti circa coperto con uno strofinaccio.</p>
<p>Dall&#8217; impasto ottenuto ricavate delle piccole, piatte schiacciatine alte circa 1cm.</p>
<p>Scaldate uuna padella antiaderente, ungetela con dell&#8217;olio di cocco e fate cuocere le schiacciatine circa 4-5 minuti per lato finche&#8217; saranno dorate.</p>

<p>200 g di ricotta</p>
<p>2 uova</p>
<p>50 g di grana grattugiato</p>
<p>1 manciata di menta, prezzemolo e basilico</p>
<p>4/5 cucchiai di olio extra vergine di oliva</p>
<p>pangrattato e sale marino integrale q.b</p>
<p>&nbsp;</p>
<p>Tritate le erbe finemente.</p>
<p>Mettetele in una ciotola e aggiungete la ricotta, i rossi d&#8217; uovo, il grana, una presa  di sale  e mescolate bene.</p>
<p>Sbattete a neve gli albumi con un pizzico di sale e incorporateli alla ricotta.</p>
<p>Formate con il composto ottenuto delle frittelline leggermente appiattite.</p>
<p>Passatele nel pangrattato e adagiatele su una teglia coperta di carta da forno leggermente unta con olio di cocco.</p>
<p>Infornatele a 180 C per circa 20 minuti .</p>

<p>•	750g carrots, peeled and grated<br />
•	300g boiled chickpeas<br />
•	1 small  onion, roughly chopped<br />
•	3 tbsp tahini paste<br />
•	1 tsp ground cumin<br />
•	1 egg<br />
•	2 tsp coconut oil<br />
•	100g breadcrumbs<br />
•	zest 1 lemon, plus 1 tsp juice<br />
•	150ml pot natural yogurt<br />
•	rocket leaves, to serve<br />
•	3 tbsp sesame seeds</p>
<p>Put a third of the grated carrot in a food processor with the chickpeas, onion, 2 tbsp tahini, cumin and egg. </p>
<p>Whizz to a thick paste, then scrape into a large bowl. </p>
<p>Heat 1 tbsp coconut oil in your largest frying pan, tip in the remaining carrot and cook for 8-10 mins, stirring until the carrot is softened .</p>
<p>Add this cooked carrot to the whizzed paste with the breadcrumbs, lemon zest and sesame seeds.<br />
Add seasoning  then mix together well with your hands.</p>
<p>Divide the mixture into 6, then using wet hands shape into burgers.<br />
Cover and chill until serving. </p>
<p>Mix the yogurt with the remaining tahini and lemon juice, then chill. </p>
<p>Heat a non-stick frying pan and brush the burgers with the remaining coconut oil. </p>
<p>Cook the burgers for 5 mins on each side, until golden and crisp. </p>
<p>Serve with the  lemony sesame yogurt,.<br />
Garnish with rocket leaves.</p>

<p>750 g di carote pelate e grattate<br />
300 g di ceci lessati<br />
1 cipolla, tagliata a pezzetti<br />
3 cucchiai di Tahini<br />
1 cucchiaino di cumino<br />
1 uovo<br />
1 cucchiaino di olio di cocco<br />
100 g di  pane grattato<br />
la scorza di un limone non trattato<br />
1 cucchiaino di succo di limone<br />
150 ml di yougurt bianco naturale e bio<br />
Qualche fogliolina di rucola<br />
3 cucchiai di semi di sesamo</p>
<p>Metti un terzo delle carote grattate in un frullatore con I ceci, la cipolla , 2 cucchiai di tahini il cumino e l’uovo.<br />
Frulla il tutto fino a che non ottieni una crema  abbastanza solida.</p>
<p>Metti il composto ottenuto in una ciotola capiente.</p>
<p>Metti mezzo cucchiaino di olio di cocco a scaldare in una padella antiaderente .<br />
Quando L’olio si e’ sciolto e la padella e’ molto calda metti le rimanenti carote grattate e cuocile per circa 10 minuti fino a che non saranno soffici.</p>
<p>Aggiungile, insieme al pan grattato, alla scorza del limone e ai semi di sesamo,  alla crema creata precedentemente.<br />
Aggiungi una presa  di sale integrale.<br />
Mescola bene usando le mani.<br />
Dividi il composto in 6 burgers.<br />
Coprili e mettili da parte fino al momento della cottura.</p>
<p>Nel frattempo unisci lo yougurt ,un cucchiaio di tahini e il cucchiaino di succo di limone.</p>
<p>Riscalda una padella antiaderente e aggiungi mezzo cucchiaino di olio di cocco, metti i burgers e cuocili  5 minuti per lato, fino a che non saranno dorati e croccanti.<br />
Servili con la crema di yougurt.<br />
Guarnisci con foglioline di rucola.</p>

<p>        Ingredients:</p>
<p>        ½ litre Soy or Oats milk<br />
	60 g dark chocolate bar<br />
	3 eggs<br />
	3 tbs cane sugar<br />
	1 small piece of vanilla pod</p>
<p>        Method:</p>
<p>	Firstly, melt the chocolate.</p>
<p>	(2)Then combine the chocolate with the vanilla pod (opened in the middle) and the milk.</p>
<p>	Bring to the boil.</p>
<p>	In the meantime beat the eggs with the sugar, in a capacious bowl.</p>
<p>	Add the boiling &#8220;milk &#038; chocolate&#8221; mixture (2), stirring gently.</p>
<p>	When you have obtained an homogeneous cream, pour it into a loaf pan.</p>
<p>	Bake it at 170C for about 50 Minutes.</p>
<p>	Let stand the cake in the fridge for about 3 hours before serving.</p>

<p>	½ litro di latte ( Soia o Avena)<br />
	60 g di cioccolato amaro in pezzi<br />
	3 uova<br />
	3 cucchiai di zucchero di canna<br />
	1 pezzettino di baccello di vaniglia</p>
<p>	1) Mettete il cioccolato a bagnomaria in un tegame.<br />
	   Unite la vaniglia (aperta), il latte e portate ad ebolizione.</p>
<p>	Nel frattempo sbattete le uova e lo zucchero in una ciotola capiente.<br />
	Aggiungete il Latte &#038; Cioccolato bollente  (1 ) mescolando delicatamente.</p>
<p>	Quando avrete ottenuto un composto omogeneo, versatelo in uno stampo da plumcake<br />
	 Infornate a 170C per circa 50 Minuti.</p>
<p>	Lasciate riposare il dolce nel frigo per circa 3 ore prima di servirlo.</p>
